The credit for the invention of the wonderful British institution that is afternoon tea goes to Anna, the Seventh Duchess of Bedford, who in the 1840's described experiencing a 'sinking feeling' in the long gap between her luncheon and evening meal. One afternoon she boldly requested that her maid bring her a pot of tea refreshment and enjoyed it so much she invited her friends to join her in this new tradition. Following on from the initial production trials in Assam, the British experimented with growing tea in the South of the country. Nilgiri was one such place and it took well to growing the plant. The method of production and its local geography mean the tea is quite similar to Assam in both appearance and taste. The leaf is black with tip (denoting quality) and it produces a rich liquor. The flavour is malty and full, similar to Assam with flavoury undertones.

Also known as Longjing or Lung Ching, this tea is considered one of China’s finest and most famous. It is said to have been named after a well that contains dense water. After rainfall, the lighter rainwater floating on its surface sometimes exhibits a sinuous and twisting boundary with the well water, resembles the movement of a Chinese dragon.

Jasmine Dragon Pearl
Pale delicate green tea twisted with Jasmine flowers. The jasmine flowers are picked in the late afternoon when the small petals are tightly closed and the flowers are kept cool until nightfall. In the early evening, when the flowers begin to open, the tea is blended with Jasmine flowers and stored overnight. During the night Jasmine flowers open, bloom and release their fragrance into the tea.

A Maghreb style mint tea, it is very refreshing and best with a hint of sugar. Traditionally known as a drink of hospitality which is offered when serving guests, and it is considered rude to refuse. Bi Luo Chun (New)
From the Dongting mountain region near lake Tai in Suzhou, Jiangsu China. Beautiful medium sized twisted green and silver leaf. The liquor is pale with a delicate aroma and buttery character not dissimilar to Tie Guan Yin. The name Bi Luo Chun literally means "green snail spring". It is so called because it is a green tea that is rolled into a tight spiral, resembling snail meat, and is harvested in early spring.

Tie Guan Yin Oolong Top Fancy
Translated as the Iron Goddess of Mercy, this is one of the most prized Oolong teas; it has a light and mellow buttery taste. The name comes from a legend telling of a poor farmer who used to pass a temple containing an iron statue of ‘Guanyin’, the Buddhist Bodhisattva of compassion, on his walk to the tea fields, and noticed that the temple’s condition was worsening daily. He decided something had to be done so he brought a broom from his home, swept the temple clean, and lit incense as an offering. He continued to return to keep the temple from again falling into disrepair. One night, Guanyin appeared to him in a dream and told him of a cave containing a treasure. The farmer went to the cave and found a single tea shoot which he took home, planted in his field, and nurtured into a bush that produced the finest tea around. He gave cuttings of this new plant to all his neighbours and told them that this exquisite new tea was called ‘Tiegaunyin’.
